Welcome to my Deliciously Ella experiment #1 – Grain free Apple Crumble.
I decided to start with the dessert section as we are a family who love sweet treats, so I thought this would go down well!
This recipe is actually taken from the Deliciously Ella app – I meant to do the recipe from the book but was missing couple of ingredients so I emptied the cupboard and went with what we had!
- 1 red apple
- 1/4 cup almonds
- 4 medjool dates
- 1 tablespoon of pumpkin seeds
- 1/2 a tablespoon of chia seeds
- 2 teaspoons of cinnamon
- 2 teaspoon of maple syrup
Peel the apple, slice into small pieces and then simmer in a shallow amount of boiling water for 10 minutes until really soft.
While the apple softens, place almonds and pumpkin seeds into a blender until they break down. Then add dates, maple syrup, cinnamon and chia seeds.
When the apple has cooked put it in a small dish, sprinkle with cinnamon and maple syrup before placing the sticky nut mixture on top.
Bake for 10 minutes at 180c until hot and crunchy!
I’m very impressed with how easy this was to make – it took 20 minutes but most of that was just waiting for the apples to cook and then time in the oven. I loved the cinnamon/apple flavour but the crumble topping was a bit hit and miss for me – I liked the flavour but the texture would take some getting used to.
Children’s verdict – the children picked the apple out (which I guess is something!). they quite like the idea of being part of an ‘experiment’ so were happier than normal to try something new. I might have to declare every mealtime to be an ‘experiment’ from now on!
Husband’s verdict – he wasn’t too sure, but once he’d covered it in custard (therefore ruining the sugar free-ness!!) he said it tasted nice!
Overall I’m impressed with how easy (and quick) the recipe was to make – I’m going to try the apple and blackcurrant crumble over the next few weeks and see if that gets a better reception (with some Deliciously Ella ice cream on the side!)
